Matthew Borowski
Matthew Borowski is a New Jersey–based restaurateur, entrepreneur, and author of The Death of Hospitality. He is the visionary behind some of New Jersey’s most recognized dining destinations, including 618 Restaurant, Mezcal, and Elizabeth’s Italian.
Matthew’s hospitality career began as a teenager and quickly accelerated through corporate restaurant leadership, becoming one of Darden Restaurants’ youngest managers before transitioning into fine dining and ultimately launching his own successful concepts. His restaurants are known for exceptional guest experiences, innovative training, and a unique culture that blends corporate-level systems with genuine, family-style hospitality.
Today, Matthew is preparing to open his fourth restaurant, Luckies Bar & Grill in Farmingdale, while also expanding the Jersey Freeze brand nationwide through franchising with his partners. Beyond his entrepreneurial pursuits, Matthew’s greatest passion is his family. His wife and their three children remain his number one priority and the driving force behind everything he does.
